We are excited about our four jars this year – brownie, chili, grain bowl, and focaccia bread. The jar recipes are uniquely created for MCCL by MCCL parents. All recipes have been tested and are singer-approved! Each jar is $10. All proceeds from this fundraiser benefit MCCL singers. Thank you for your support!

Confetti Chili

Ingredients in jar: pinto beans, kidney beans, black beans, navy beans, spices*, cornmeal. (*cocoa powder, parsley, granulated garlic, cumin, minced onion, paprika, salt)

Ingredients to add: water, diced canned tomatoes, ground beef (if desired). See variations below.

For vegan variation:

Prepare chili following your preferred method (stove top, instant pot, or crock pot) omitting meat.  Toss 2-3 cups cubed butternut squash and 1-2 coarsely chopped red and/or green peppers in 2 T. extra virgin olive oil.  Roast on a sheet pan in 400 degree oven for 30 minutes or until they are soft and beginning to caramelize around the edges.  Gently incorporate into your prepared chili and enjoy!

For crock pot preparation:

Soak beans following the instructions for stovetop and instant pot.  Bring soaked beans and soaking liquid to boil on stovetop and simmer for 30 minutes. Empty into crock pot.  Add 1 lb. browned ground meat (your choice), 2 (14.5 oz) cans diced tomato, remaining spices from jar, and salt and pepper to taste.  Cook on High for 3-4 hours, Low 6-8 hours or until soft.  

Savory Focaccia Bread

Ingredients in jar: all-purpose flour, semolina flour, paprika, parsley, yeast, salt, rosemary

Ingredients to add: water, olive oil, garnish (as desired with black olives, sun dried tomatoes, ham, cheese, onions, peppers). See variation below.

Variation – Overnight Focaccia
(Fun breakfast option)
Mix focaccia according to instructions on tag, but instead of allowing to raise in mixing bowl, transfer directly into prepared pan. Spread dough to an even depth, roughly rectangular (it will resist being spread all the way to the corners), cover loosely and place in refrigerator overnight (or for approximately 8 hours). In the morning, your focaccia will be ready to garnish and bake. (Follow garnish and bake instructions on tag) For a breakfast focaccia, try garnishing with chopped ham and cheese, onions and peppers.

Grain Bowl (side, salad, or Main Dish)

Ingredients in jar: pearled barley, mung beans, quinoa, lentils, dried cranberry, almonds, parsley, curry powder, dried chives, onion flakes, granulated garlic

Ingredients to add: olive oil, garnish and greens (as desired). See variations below.

Variation Grain Bowl Kale Salad
Extra ingredients needed:
1 medium bunch of curly kale (about 8 oz.)
2 oz. crumbled feta cheese (about 1⁄3 cup)
1 cup chopped celery
Chopped scallions to taste

Dressing:
2 T. Extra Virgin Olive Oil
2 T. lemon or lime juice
1⁄2 t. Salt
2 t. Dijon mustard
2 t. honey

Prepare Grain Bowl mix according to tag instructions. While the mix is simmering, tear washed kale into bit sized pieces, removing ribs. Sprinkle with a bit of salt and massage in handfulls until kale is dark green, fragrant and slightly reduced in volume. Add chopped celery and
scallions. Whisk together dressing ingredients and set aside. Add slightly cooled grain bowl mix to kale; pour over dressing, chopped feta, and toss to combine all ingredients. Salad keeps well for several days in the refrigerator. Yield: 6 cups

Variation – Grain Bowl Harvest Stacks (Main Dish)
Prepare six cups of a mix of chopped autumn vegetables. (halved brussels sprouts, cubed sweet potato, delicata squash, carrots, parsnips, rutabagas, or beets) Toss with 3 T. of extra virgin olive oil and optional 1⁄2 tsp cumin and 1⁄2 tsp cinnamon. Arrange prepared vegetables in
single layer on baking sheets (can be lined with parchment). Sprinkle with salt and pepper if desired. Roast in 425 oven for 20-30 minutes or until desired softness is achieved. Prepare Grain Bowl mix while vegetables are roasting. Serve roasted vegetable “stacked” over grain bowl base and garnish with handful of arugula, chopped scallion, crumbled feta. Drizzle with vinaigrette and enjoy!

Peppermint BrownieSOLD OUT

Ingredients in jar: all-purpose flour, peppermint krunch candy, mini semisweet chocolate chips, sugar, cocoa powder, black cocoa powder, baking powder, salt

Ingredients to add: butter, eggs, vanilla
